Charles

As a child I wanted to be a chef or a baker but my Mum said no because the hours were bad (she was right) - so that was that - and I plumped for a career in science instead. 
Today I bake as a hobby using high quality organic flours that don't include additives.  I really enjoy small-batch baking of good, basic, wholesome bread using traditional long fermentation techniques.

In July of 2012 we saw the fulfillment of a long held ambition when we moved to our small, two acre hobby farm in North Saanich.

Part of the dream was to indulge Charles' desire to bake bread and we now have a very tiny, but functional, bakery kitchen where he practices his craft!

Charles has been bread making for many years following a long-held family tradition of home-made bread which he experienced at his mother's knee.  Over time he has gathered extensive knowledge through research into methods, techniques and ingredients whilst the science behind the magic of turning a few simple ingredients into wholesome loaves continues to grip his interest.   
Today with LOTS AND LOTS of experience under his belt the results of all this knowledge and practice keep folk coming back for more WillowTree real bread !
