As a child I wanted to be a chef or a baker but my Mum said no because the hours were bad (she was right) - so that was that - and I plumped for a career in science instead.  I bake as a hobby and like to use high quality ingredients that do not include additives.  I bake small batches using traditional long fermentation techniques.

In the Bakery Kitchen

In July of 2012 we saw the fulfillment of a long held ambition when we moved to our small two acre hobby farm in North Saanich.   
A high priority for us was to convert the  cottage into a bakery kitchen so that Charles could indulge his passion for baking high quality artisan bread for the local farmers market.

Charles has been bread making for many years and during that time has researched methods, techniques, ingredients and the science behind the bread-making process .
