We own a small hobby farm in the heart of North Saanich on beautiful Vancouver Island. Charles is a hobby baker and in our micro-bakery he crafts artisan bread which we sell all through the year to enthusiastic lovers of Real Bread !
Our artisan loaves are made using traditional long fermentation methods and organic flours. We are continually looking for ways to improve the quality of our bread and creating interesting flavours to enhance our repertoire.
We often use our own organic farm produce to make loaves such as Garlic and Rosemary Focaccia; or Tuscan Herb Loaf or Caramalized Onion Boule.
Also, right here on the premises, we stone-grind Canadian grown organic Red Fife wheat which makes extremely tasty and nourishing loaves.
Each bake day Charles offers Pains au Chocolat and Croissants which he makes from scratch. This type of pastry is a special passion for Charles and the results are mouth watering!
We sell our bread mainly by a pre-order system but if you pop by when our Bakery is open you will find a selection of loaves in the Baker's Basket and, with luck, some extra pastries for sale too . . .

French Quality Croissant !
Since 2021 we have been using butter that has the same 84% butterfat content as is required in France – a higher standard than in North America. There is only one creamery in Canada, in Stirling Ontario, producing this type of butter and we bring it in especially for our Croissant & Pain au Chocolat.
Bite into one of our Croissants and the taste will take you straight to that special little corner café in Paris! |
